Riza Shanti Lim is a remarkable health advocate whose extensive expertise is complemented by a profound commitment to wellness and healing through the transformative power of food. As a certified Clinical Master Herbalist, Holistic Health Practitioner, and Nutritionist Consultant, she has honed her skills at the esteemed Natural Healing Institute of Naturopathy in San Diego, USA. Riza further expanded her culinary repertoire by completing specialized training in Plant-Based Culinary Arts at the serene Pataleban Vineyard Resort Meditation in Nepal, where she explored the intricate relationship between nutrition and mindfulness.

Her academic journey continued with a rigorous program in Mindfulness in a Clinical Approach at Harvard Medical School, equipping her with the tools to integrate mental well-being with holistic health practices. Additionally, Riza is a certified Yoga and Meditation Teacher from Yoga Darshanam in Mysore, India, enhancing her holistic philosophy with ancient practices that promote physical and mental harmony. In celebration of this momentous milestone, The Manila Hotel graciously hosted an exclusive press dinner at the elegant Champagne Salon on the evening of May 7, 2025. Guests were treated to a meticulously crafted, multi-course preview of an exquisite vegetarian fine dining menu, masterfully orchestrated by the talented Chef Riza Shanti Lim under the keen supervision of Executive Chef Konrad Walter, with the dedicated support of The Manila Hotel’s culinary team.
The evening unfolded with a symphony of vibrant flavors and artfully presented dishes that delighted the senses. Attendees savored the delicate Fresh Garden Spring Roll, enveloped in a luscious Peanut Cream Sauce, and relished the aromatic Papaine Moringga with Crisps Soup, which offered a unique twist on traditional flavors. The refreshing Fern Salad adorned with Paneer provided a delightful crunch, while the Vegan Skewers showcased a medley of seasonal vegetables, grilled to perfection. The pièce de résistance was the 8 Spice Curry, rich in depth and warmth, complemented by the Creamed Buko Pandan Plantain with Chia Seeds, a sweet and creamy finale that left guests enchanted. Each dish not only celebrated the artistry of plant-based cuisine but also reflected a commitment to sustainability and innovation in culinary excellence.
